Needing a CORNED BEEF • PECHO fix in honor of ST. PATRICK'S DAY while living in Costa Rica??
Surprisingly, you CAN find Corned Beef at numerous stores in Costa Rica - YEAR-ROUND!
If you want it around St. Patrick's Day, do NOT WAIT as it often runs out just before!
Note if you're making it from scratch/beef, I've seen that it based on the recipe you're using, it can take anywhere from 10 days to 3 weeks to make/cure.
Note prices are based on the price I was given on March 12, 2015 and may vary by location if it's a store with multiple locations & by the day (FYI - I contacted locations in Escazu).
Uncle Earl’s Fine Meats
Uncle
Earl’s in Escazu carries Corned Beef•Pecho (call first to make sure
it’s ready/they have it before coming in) - BUT - it is VERY DIFFERENT
than your standard nitrate ridden Corned Beef as their Corned Beef is
ALL NATURAL. Not adding all the standard things most are used to in
store bought corned beef. Without nitrates or any other chemicals to
turn it red or cure it - it makes Uncle Earl’s Corned Beef flavor &
color a bit different (so don’t think IT’s “Bad” because it’s just

Uncle Ear’s CORNED BEEF MAKING PROCESS:
They age
their Roast Beef, then marinate it, then cure it in Himalayan Salt, then
cook it in a slow cooker with some vegetables and then they smoke it.

"Uncle Earl's" in Jaco: I understand that they are still open BUT - they are no longer part of the Uncle Earl's parent company so not sure if the quality•standards are still the same high standards that Uncle Earl's in Escazu is.
